Radish sandwiches with herb butter

Serves 3-4

  • 1 bunch radishes, washed and trimmed

  • 1 french baguette or 8 slices sourdough bread

  • 1/4 lb. (1 stick) unsalted cultured butter

  • 2 tsp. minced garlic

  • 2 tsp. minced fresh herbs (dill, parsley, chives, thyme etc.)

  • 1/2 tsp. lemon juice

  • 1/2 tsp. sea salt

  • a few turns of ground black pepper

Let butter sit in a warm place for 15-20 minutes to soften. 

Slice the radishes thinly with a sharp knife or mandolin. 

Once butter is softened, place in a small bowl and mix together the butter, garlic, herbs, salt, pepper and lemon juice. 

Cut the baguette into 8 pieces. Toast bread lightly.

Spread the toast with the herb butter and arrange radish slices on top. Sprinkle with more salt and pepper to taste.
