Straight-forward Fennel and Radish Salad
Shaved Fennel and Radish Salad
Serves 4
- 2 heads fennel 
- 5 radishes 
- 2 tbs olive oil 
- 1 tbs lemon juice 
- 1 tsp dijon mustard 
- Salt and pepper to taste 
Whisk together olive oil, lemon juice, and dijon mustard in a small bowl and season with salt and pepper.
Shave or thinly slice the radishes and fennel. Combine in a large bowl. Reserve the fennel fronds.
Toss the dressing with the sliced radish and fennel. Top with fennel fronds.
