Creamy broccoli slaw
Serves 4-6
- 2 small heads broccoli- florets cut into small pieces, stems peeled and thinly sliced or grated- about 5 cups 
- 4 carrots, thinly sliced or grated- about 3 cups 
- 1 garlic clove, minced 
- 3/4 cup plain greek yogurt, whole milk yogurt or mayonnaise 
- 1 tbs. dijon mustard 
- 1 tbs. olive oil 
- 1 tsp. honey 
- salt and pepper to taste 
- optional toppings- dried cranberries, toasted sunflower seeds, crumbled cooked bacon, chopped dill or other fresh herbs 
Combine the sliced vegetables and herbs in a large bowl.
Mix together the yogurt, mustard, oil, honey and garlic.
