Creamy broccoli slaw

Serves 4-6

  • 2 small heads broccoli- florets cut into small pieces, stems peeled and thinly sliced or grated- about 5 cups

  • 4 carrots, thinly sliced or grated- about 3 cups

  • 1 garlic clove, minced

  • 3/4 cup plain greek yogurt, whole milk yogurt or mayonnaise 

  • 1 tbs. dijon mustard

  • 1 tbs. olive oil

  • 1 tsp. honey

  • salt and pepper to taste 

  • optional toppings- dried cranberries, toasted sunflower seeds, crumbled cooked bacon, chopped dill or other fresh herbs

Combine the sliced vegetables and herbs in a large bowl. 

Mix together the yogurt, mustard, oil, honey and garlic. 

Toss the vegetables in the dressing and add salt and pepper to taste.  Let sit 20-30 minutes to let flavors combine.
