Creamy Lemon Zucchini Pasta

2 lb zucchini, grated or thinly sliced

1 small onion, thinly sliced

4 cloves of garlic, grated or diced

3 Tbsp. olive oil

12 oz. spaghetti or linguine

the zest of 1 lemon

1/2 of heavy cream

salt to taste

1/4 cup of parmesan and fresh basil for serving

1. Saute zucchini and onion in a medium saucepan on high heat til caramelized- about 8 minutes.

2. Add garlic, and continue to saute for 2 minutes longer.

3. Meanwhile, boil a pot of water and cook pasta for 8-10 minutes or until al dente.

4. Remove zucchini, onion, and garlic from saucepan. Add heavy cream, zest of one lemon, and salt. Continually stir and heat until cream is warm.

5. Toss with cooked pasta, sauteed vegetables, and cream sauce. Garnish with parmesan and fresh basil
