Za'atar spiced beet dip

Makes 3 cups

  • 6 medium beets

  • 3 tbs. olive oil  

  • 2 small garlic cloves, minced

  • 1 cup plain Greek yogurt

  • 1 tbs. za'atar spice or some combination of oregano, thyme, sumac, and sesame seeds if you don't have za'atar on hand

  • salt to taste

  • crumbled goat cheese for serving if you please

Preheat the oven to 350 degrees.

Peel beets and cut into quarters.

Toss beets with olive oil, place on a roasting sheet, and bake for 25 minutes or until tender.

Once cooled, transfer to a blender and puree with garlic, yogurt, za'atar, and salt to taste.

Scrape into a wide, shallow bowl, top with goat cheese, and serve with warm bread or pita.
