Purple daikon salad with honey lime dressing
Serves 4
- 1 large purple daikon, sliced into matchsticks 
- 2 medium carrots, sliced into matchsticks 
- 2 green onions, thinly sliced 
- 1 tbs. toasted sesame oil 
- 1 tbs. rice vinegar 
- 1 tbs. honey 
- 1 lime, juiced 
- Sesame seeds for garnish 
Combine sliced daikon, carrot, and green onion in a medium bowl.
Whisk sesame oil, rice vinegar, honey, and lime juice. Toss dressing with daikon and carrot, salt to taste.
Sprinkle with sesame seeds and serve.
