Spicy roasted oven fries

Serves 4

  • 6-8 medium potatoes, about 2 lbs., sliced into wedges or sticks about 4 inches long x 1 inch wide

  • 4 tbs. olive oil

  • 2 tsp. salt

  • 1 tsp. garlic powder

  • 1 tsp. paprika or smoked paprika

  • a few pinches cayenne pepper or red pepper flakes

  • 2 tbs. chopped parsley for garnishing, optional

Preheat oven to 400 degrees. 

Place potatoes in a large bowl and toss them in the oil, salt and spices. 

Spread the potatoes onto one large or two medium sized baking sheets. 

Bake for 20 minutes then gently flip with a spatula. Bake another 20-25 minutes until very soft and lightly crisp on the outside. Let cool 10 minutes.
